Creamy Chicken Salad

Easy to prepare, guilt-free, chicken salad


INGREDIENTS:

4 oz of boneless skinless chicken 
1/2 cup of spring onion/scallions; finely chopped 
1/2 cup of non-fat plain Greek yogurt
2 1/2 tbs of mayonnaise 
2 1/2 tbs of relish
1 1/2 tsp of black pepper
1 tbs of paprika
1 tbs of sugar
a dash of salt


DIRECTIONS:

Preheat oven to 350 degrees F. Season chicken with salt and pepper. Lightly coat a baking tray with your oil of choice (extra virgin olive oil, coconut oil, nonstick spray, etc...) place chicken on the baking tray. Bake chicken for about 20-35 minutes; making sure the internal temperature is 165 degrees F if you are using a meat thermometer. 

Combine the greek yogurt and mayonnaise, mixing well until fully combined. Then add the remaining ingredients (spring onion, relish, black pepper, paprika, sugar, and salt). Mix once more and combine all the ingredients, put the mixture into the refrigerator. 

After the chicken has finished cooking, remove from the oven and let it rest and cool. After chicken has cooled off cut into bite-size pieces (1-inch). Remove the mixture from the fridge add the chicken and mix together.
